Spring is a great time for cooking and creating fresh, delectable dishes bursting with flavor. Asparagus, salad greens and new potatoes, along with spring fruits like apricots and cherries make spring meals especially fun to prepare and eat. Whether you want to create a special spring brunch or a great dinner for family and friends, you can’t go wrong with recipes that showcase the best of the season.


Herbed Chicken Cutlets and Sugar-Snap Peas

Many spring herbs pair well with chicken, and fresh snap peas provide an elegant side when paired with hearty artichoke hearts. Whip up a light and easy sauce; serve it all together with a salad of fresh greens. You can make it family-style with a huge salad bowl and large nonstick electric skillet for sautéing the cutlets and peas.


Asparagus and Pea Salad

Using young, tender, raw asparagus and peas in a green salad is a great way to get extra vegetables into your diet, while creating a truly satisfying meal. The asparagus will need to be thinly sliced, so you’ll need a good knife and cutting board. Serve it with your favorite dressing, topped with chunks of ham and boiled egg for extra protein.

It looks very fancy but is really quite simple if you have the patience to learn.


Asparagus wrapped in Prosciutto Ham

Tender spears of asparagus can be paired with a wide variety of other foods, but Prosciutto ham is the perfect complement. Wrapped asparagus spears make a wonderfully elegant addition for brunch or dinner. Grilled asparagus, herbed cream cheese and thin Prosciutto are made into small bundles and served fresh off the grill. This is an excellent addition to chicken or fish, or they may be served with steak or gourmet hamburgers for an elegant grilled dinner.


Spring Fling

Spring is the best time to create fresh, bold dishes with exquisitely balanced flavors and a variety of cooking techniques. Grilling is especially popular this time of year, as the weather is finally getting warmer, and vegetables are taking center stage with the earliest harvests beginning to come in.
